After thirty years of leading culinary tours throughout Mexico, many with
Ricardo Muñoz, one of Mexico’s leading chefs and a regional cooking authority,
the two of us wanted to write this book showing how the culinary heritage of the
indigenous people, Europeans and Africans coalesced into one of the world’s most
celebrated cuisines. Cooks from all of these cultures shared their recipes of
both their daily and festive foods, some quite familiar, but many very unusual.
